5 reasons you should be drinking kombucha

You’ll only find 4g of sugar in a stubby of Spark Kombucha, compared to the 30g+ you’ll consume in a can of pop – yikes! Though sugar is used to brew the kombucha tea, much of it is eaten up during fermentation. Spark’s fermentation process has been stretched out to a minimum of three weeks, followed by a week of flavour infusion. Adding an extra week or two to the fermentation process not only creates Spark’s unique dry taste, it also reduces the final sugar content.
The funky looking floating mass that is the kombucha SCOBY (Symbiotic Colony of Bacteria and Yeast) is actually hard at work producing a lot of good-for-you acids and enzymes. Though every SCOBY is different, in general they’re known to produce acetic acid, nucleic acid, gluconic acid, amino acids, malic acid, lactic acid, and oxalic acid. These acids are good for your digestion, stabilizing blood sugar, fighting yeast overgrowth in your guts, and so much more. Because Spark Kombucha is unpasteurized (or raw, as we like to say) that means that any probiotics that are created during fermentation are still there when you take a sip.
